Ok, so we seem to have a pattern (it only took us one year to see it.) We have one or two good nights, then we get one or two bad nights. It sucks, I know, but that's the way it is. Billy Boy has gas and when he feels the pressure, he swallows even more air, adding to the problem. Therefore, we are now exhausted, physically and emotionally.

You might try adding some liquid simethicone (generic available, also trade names mhylicon and gas-X,all OTC without prescription) to his feeding formula. It is a harmless detergent which prevents gas from forming large bubbles which are hard to burp or pass.
